Hi there
Have done a lot of travelling around Europe myself (motorhome). Can recommend Poland for an interesting and relaxing location if you enjoy a bit of culture, walking etc. Escpecially the towns of Poznan and Wroklaw (the campsites are close to the towns with plenty of wide open spaces for walking).
However having lived in Portugal for the past two years I highly recommend this as a destination - central Portugal that it. The countryside is stunning, the scenery breathtaking, the people very hospitable and there is a lot to see and do.
