How can I tell if a tailor is experienced?

So I bought this super expensive leather jacket on a trip to Italy. I love it. It has a classic look, but it has shoulder pads sown inbetween the leather and the lining. They're not really obvious, but you can tell there's something there. I'm still wearing the jacket with them in, but I'm thinking of getting them taken out. How can I tell if a tailor is experienced enough to do this job for me? How much should I expect to pay? I've never had anything tailored before.

They'll have fingertips so callused they'll be like titanium.



You need a leather worker for that.
