Easy healthy recipes?

I'm in college and live on campus in a dorm. What are some easy, healthy, and inexpensive recipes I can make? I only have a microwave.



I'd like recipes and/or ways I can cook/prepare the following items (together or by themselves) using only a microwave:



Skinless chicken breast

Turkey bacon

Tofu

Eggs

Lunchmeat

Cheese

Nuts

Green Beans

Black Beans

Butter Beans

Broccoli

Cauliflower

Collard Greens

Cucumbers

Lettuce (All varieties)

Mushrooms

Mustard Greens

Okra

Onion - Limit to 1/2 per day

Peppers (All varieties)

Spinach

Squash: Summer, Yellow

Zucchini

Tomato



I'm trying to follow the South Beach Diet so the above foods are the only foods I can eat for the first two weeks, so PLEASE try to only use these foods and give me plenty of easy, quick, and inexpensive ways to prepare meals and snacks using these foods!

You can steam veggies in a bowl with a little water in the microwave (broccoli, cauliflower, peppers, zucchini, squash, green beans) You'll have to look up microwave directions for okra, mustard greens etc. because I don't know about those. As far as tomato, cucumber and lettuce..those are best raw.
